How to Grill Mahi Mahi

The Mahi Mahi is a ray-finned fish found normally in tropical and sub-tropical waters worldwide.

Although also known as the ‘dolphin-fish’ it has no relations to the dolphin or mammals species.

Mahi-Mahi is grille or cooked just like most types of fish. It is a delicious, low-fat and high protein dish. Making it ideal to cook on the barbecue.

Preparation – Grilled Mahi Mahi

You can prepare your Mahi Mahi as a whole fish or cut up into fillets. Always rinse the fish before grilling and pat dry with a paper towel.

Let Mahi Mahi thaw out in the refrigerator over night, rather then defrosting it in the microwave.

Season with fresh ingredients like thyme, rosemary and oregano. Drizzle a small amount of olive oil or salad dressing to give the fish a layer of protection for when you grilling.

Use aluminum foil when preparing the whole fish, this will keep it from burning and drying out. Do this by first seasoning the Mahi Mahi then enclosing it foil lock in the fishes natural juices.

When preparing fillets or pieces of Mahi Mahi you may grill them straight on the grill without any foil. Coat them with olive oil to prevent them from drying out or burning.

Barbecuing Mahi Mahi

When grilling the whole fish pre-heat the grill to a high heat. Place the fish wrapped in foil on the grill for about 8 – 10 minutes on each side. Grilling time will depend on the size of the fish and the heat of the grill.

Close the lid to create an oven effect and even heat circulation. The meat will change to a ‘cooked’ colour when it is done.

When grilling Mahi Mahi pieces or fillets, pre-heat grill to a high heat. Sear the outside for a minute on eachside and then turn temperature down to a medium heat to slow cook the inside.

The Beef With Black Bean Sauce Recipes

Preparation time: 20 minutes + 30 minutes marinating
Total cooking time: 15 minutes
Serves: 4

Ingredients for the beef with black bean sauce recipes:

500g (1lb) rump steak, cut into thin strips
1tablespoon cornflour
2 tablespoons sherry
2 tablespoons soy sauce
2 teaspoons sugar
oil, for cooking
1 onion, thinly sliced?
2 cloves garlic, finely chopped
1 tablespoon finely chopped fresh ginger
1 red capsicum, thinly sliced
90g (3 oz.) drained bamboo shoots, sliced
6 spring onions, diagonally sliced
2 tablespoons salted black beans, rinsed well and mashed

Directions for the beef with black bean sauce recipes:

1. When you are thinking of start trying the beef with black bean sauce recipes, start with these guidelines in mind. First put the beef in a glass or ceramic bowl. Combine the cornflour with the sherry, soy sauce and sugar to make a marinade. Pour over the meat and toss well. Cover and refrigerate for 30 minutes.

2. Drain the meat, reserving the marinade. Heat the wok until very hot, add 2 teaspoons of the oil and swirl it around to coat the side. Stir-fry the meat in two batches for 2-3 minutes, or until browned and just cooked. Add more oil when necessary. Remove all the meat from the wok.

3. Reheat the wok, add 1 tablespoon of oil and stir-fry the onion over medium heat for 3-4 minutes, or until softened. Stir in the garlic, ginger and capsicum, then increase the heat to high and cook for 2-3 minutes, or until the capsicum is just tender.

4. Add the reserved marinade, bamboo shoots, spring onion, black beans and 2-3 tablespoons water to the wok. Toss over high heat until the ingredients are well coated and the sauce is boiling. Return the beef to the
wok and toss until heated through. Remove from the heat and season well. Serve immediately.
