@mebkick01 Thanks, we built a tray a few months back that slides into a rack above the fire. Has worked great, was surprised how much more humidity it puts in the smoker. Before we built the tray we used a stainless dogfood dish (no it never was used for the dogs, lol) . Hey, whatever works, right? Never thought about a coffee cup, that woulda fit too.

Hey Pit Boys! Awesome video! Itried this with my new Brinkman smoker with good results. My babyback ribs were just a little tough, though (but only a very little), and I was thinking about a tenderizing marinade. Any suggestions for a tenderizer marinade? Keep up the good work.
@sfoot22 No need for a water tray. Get a ceramic coffee cup (without painting or decorations) and put apple juice in it. Set it on the grill. It will eventually come to a near boil and moisturize the chamber as it evaporates. Refill as it gets empty.
I have been following these guys recipies and instructions for a long time. They know the Q! delicious!
@Pops57 If you wanted to keep the temp low, try doing a “crutch” where after a couple hours, wrap it in foil. This prevents it from drying out. Look up the 3-2-1 method, I have had good results, except on the 1 hour, I only do like 20 min, otherwise it dries right out.
@Pops57 Try The Brine recipe for a marinade. Works great for bbq and fried chicken. I also use a Brinkman offset smoker.

i soak it in pineapple juice( make the meat mo tender) the night befor and drain it in the morning then dry it with paper towel befor adding the rub( go easy on the erub and less salt if possible i find that too much salt dry the meat out faster
