i did fat side up… on suggestion of cooks illustrated… seems to “baste” the meat.
I found the electric version first – after learning a bit it sounds like the Weber Smokey Mtn. Cookers are the best… but I hope it may help you see what i did. ‘Bout 8.5 hours for 6.5 pond brisket… 2 chimneys of charcoal (1 at a a time)
I have that type of smoker as well. I take it camping and the campground loves it when I’m smoking stuf.

Now I know everyone’s got their own tastes, and being from Texas myself I know hickory is readily available, but my father’s more prone to pecan. It smoke up the same with pecan, or even oak?
