Got any good summer desert recipes for a bbq?

I am just learning to cook. I like really sweet deserts. Thank you in advance.
Oops, I meant to take to a bbq not cook on a bbq. However, I am going to try a couple of those recipes on the bbq. The pineapple one sounds great!!
All of your ideas sound good. I am sure I will make of them before I go to bbq. I trial run everything before I take it anywhere.

    I love jello cake beleive me it is yummy and a cool treat for desert.Just bake a yellow or white cake mix ,i prefer betty crocker or duncan hines.so buy a cake mix ,and a jello mix and coolwhip.Bake your cake ,let cool then make up the jello as directed on box ,except you dont refrigerate instead you take and poke slits all through out your cake after it cooled.Then you take the liqiud jello mix you made up and pour it in those holes on the cake all over it.then i put it in the fridge to chill it more, then i spread cool whip all over the cake like frosting.I prefer strawberry flavor jello but anyone is yummy.

    Just grill some fresh pineapple spears (no other ingredients needed!) or some fresh peach halves and then drizzle with a little balsamic vinegar! Makes good use of the heat off the bbq while you’re enjoying the main meal!

    But you may have meant any desserts that finish off a bbq meal. Thoughts are endless for those – whether it’s a bbq or other dinner!

    I’m reading that as desserts to serve at a barbecue, not something that can be cooked on the grill. Chunks of fruit (whatever’s in season at your local market) piled into a big clear glass bowl, with vanilla pudding on top. It sounds a bit odd, but is really good.

    If you need something that can be cooked on the barbecue or in the coals, scoop out the insides to 6-8 oranges. Cut the top off like you’re carving a pumpkin and leave the skin as intact as you can. Fill each about half-full of white or yellow cake batter. (Make it from a mix, according to the directions on the box.) Wrap each one carefully in foil and place the mall in the coals for about 20 minutes. Pick one and open it carefully, then check it for doneness by sticking a long thin skewer into the cake part. Cook them a little more if needs be.

    make a simple syrup (1 part water, 1 part sugar) bring to a boil, then add a good amount of mixed berries and let them soften slightly. a saute pan is best for this. put over some vanilla ice cream and maybe sift some cinnamon or nutmeg over it.

    if you are feeling adventurous, you can flambe the berries in brandy.

    also, you can core apples, fill the middle with honey, cinnamon, nutmeg, and ground cloves, wrap in foil, and place in some hot coals until the apple is fork tender. you can have this one with ice cream too.

    12 servings
    4 cups fresh strawberries, divided
    1 can (14 oz.) EAGLE BRAND® Sweetened Condensed Milk
    1/4 cup lemon juice
    1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
    8 OREO Chocolate Sandwich Cookies, finely chopped
    1 Tbsp. butter, melted

    LINE 9×5-inch loaf pan with foil, with ends of foil extending over sides of pan. Mash 2 cups of the strawberries in large bowl. Add condensed milk, juice and 2 cups of the whipped topping; mix well. Pour into prepared pan.

    MIX chopped cookies and butter. Spoon over whipped topping mixture. Cover with ends of foil and gently press cookie mixture into whipped topping mixture. Freeze 6 hours or until firm.

    INVERT dessert onto serving plate when ready to serve; remove pan and foil. Spread remaining whipped topping onto top and sides of dessert. Slice remaining 2 cups strawberries; arrange over dessert. Store leftovers in freezer.

    This is Easy but Gets Wows from All !
    Brownie Delight

    Mix in a Lg. Bowl
    1- 3 oz. Vanilla pudding mix
    1 pound Powdered sgar
    8 oz. tub Cool Whip
    8 oz. Cream Cheese ( softened )

    Layer the Fluffy Mix / then Crumbled Brownies/
    drizzle Caramel Ice cream Topping
    .. Repeat Layers- chill.
    YUMMMY!

    you know what is really good?pineapple on the bbq. dip in butter and brown sugar, grill til its got bbq lines on it. yummy!

    What about an assorted fruit bowl. Cut fruit up and layer it in a glass bowl. Ideas are pineapple, strawberries, honey dew, cantaloupe, grapes, watermelon, and black raspberries for the top layer. It’s refreshing to look at it and it is good for you. Have a great BBQ.

    CARAMEL CAKE

    1/3 c. granulated sugar
    1/4 c. boiling water
    3/4 c. butter
    1 1/4 c. sugar
    3 eggs, unbeaten
    3 c. sifted cake flour
    3 1/2 tsp. baking powder
    1 tsp. salt
    1 c. milk
    1 tsp. vanilla

    Melt the 1/3 cup sugar in heavy skillet, stirring constantly until deep brown syrup is formed (caramelized). Remove from heat and slowly stir in boiling water. Set syrup aside to cool. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
    Stir in 4 tablespoons cooled syrup. Sift together dry ingredients and add alternately with combined milk and vanilla, beginning and ending with dry ingredients. Beat until smooth. Pour into 2 (9 inch) layer pans lined with greased and floured brown paper.

    Bake at 375 degrees for 25 minutes. Let stand in pans a few minutes, then remove to turn out. Peel off paper and cool on racks. Frost when cool.

    CARAMEL FROSTING:

    3 c. brown sugar, firmly packed
    1 c. and 2 tbsp. light cream or half and half
    1/2 stick butter
    1 tsp. vanilla

    Mix sugar and cream and cook over low heat to soft-ball stage (235 degrees on candy thermometer). Remove from heat, add butter and cool. Add vanilla and beat until frosting is spreading consistency. A little cream may be added if frosting becomes too thick. Spread between layers, on top and sides of cake

    DIRT PUDDING

    INGREDIENTS:
    1 pound bag of Oreo’s
    1 large box of instant vanilla pudding
    1 small container of Cool Whip
    1 Tablespoon powdered sugar

    INSTRUCTIONS:
    1.) Crush 3/4 bag of Oreo’s and spread in 9 x 13 baking dish.
    2.) Make pudding as directed on package.
    3.) Add Cool Whip & sugar, spread over crushed Oreo’s.
    4.) Crush remaining Oreo’s and sprinkle on top of pudding mixture. Refrigerate.

    Banana Pudding

    I usually double the recipe….never any left-overs.

    Ingredients:
    Bananas
    Use instant Banana pudding or vanilla pudding fix by directions on box.
    Cool Whip…add to pudding mix thoroughly.
    Vanilla wafers
    Toasted coconut.

    Line serving dish with a layer of vanilla wafers (a row up the sides of dish, also.)
    Add a layer of sliced of bananas
    Gently cover with a layer of 1/2 pudding mixture.
    Make a second layer of wafers, bananas & pudding.

    Top with some toasted coconut and/or crushed vanilla wafers.

    Mock Ice Cream Sandwiches

    2 whole graham crackers
    Cool Whip

    Spread a thin layer of Cool Whip on 1 whole cracker….top with remaining cracker….freeze.

    Make several at a time.

    Melt some chocolate and drizzle over top before freezing

    Have ice cream sundae bar with homemade brownies

    Simple brownies

    1 stick of butter
    2 oz. unsweetened chocolate
    1 cup sugar
    1 cup flour
    2 eggs
    4 Tbsp milk
    1/2 cup walnuts, coarsely chopped
    1 Tbsp vanilla

    Melt butter and chocolate. Stir in sugar and rest of ingredients. Mix until well blended–not too much.
    Pour into 8″x8″ pan and bake at 350* for 30 minutes or until center is just set but not dry.

    These are cakey brownies. If you like them a bit gooier, add 1/2 cup semi-sweet chocolate bits to batter before baking

    These are my favorites to bring to a bbq.

    Pig Out Cake
    1 box of yellow cake mix
    1 small can (11oz) of mandarin oranges, undrained
    1/2 c. oil
    4- eggs
    Icing:
    12-16 oz Cool whip (I use 16 oz)
    1 lg. can crushed pineapple, undrained
    1 sm. pkg. instant vanilla pudding
    Combine cake ingredients and mix well. Bake in rectangle pan at 350 degrees for approximately 30 minutes or until inserted tooth pick comes out clean.
    Combine icing ingredients and spread on cooled cake.
    Cake does need to be refrigerated until ready to serve.
    * I sometimes add flaked coconut to the icing mixture.

    Watergate Salad
    1 lg can crushed pineapple
    2 small boxes pistachio instant pudding
    1 c. mini marshmallows
    1/2 c. coconut
    1 lg carton Cool whip
    Mix pineapple and pudding mix together; then add marshmallows,
    coconut and Cool whip. Mix and Chill.
    You can add a small can of fruit cocktail- drained and a small bag of chopped walnuts.

    Strawberry Pretzel Salad
    2 cups crushed hard pretzels
    3/4 cup melted butter or margarine
    3 tablespoons sugar
    1 package (8 oz) cream cheese
    2 cups whipped cream or whipped topping
    1 package (6 oz) strawberry gelatin
    1 package (10 oz) frozen strawberries, thawed
    2 cups boiling water
    1 cup sugar
    Mix together the crushed pretzels, butter or margarine, and 3 tablespoons of sugar. Put into a 9 x 13-inch baking dish; bake at 400° for 8 to 10 minutes. Mix together the cream cheese, 1 cup sugar, and whipped topping. Mix gelatin into boiling water, then add frozen strawberries. Spoon over cream cheese mixture. Garnish with fresh strawberries.
