Rudy’s has great sides but that’s it. The place to go in Austin is a little place by Mount Bonnell called Porky’s. That is the best all-around BBQ that there is.

I hate to disappoint, but that is not Rudy’s Rub recipe – that is the Mikeska family rub recipe.

Rudy’s has onion powder, garlic powder and sugar along with the salt/pepper/cayenne

Thanks, is this a secret? Are you from Rudy’s? I know I read somewhere that they only use Oak and not mesquite, is that true to?? I’ve had BBQ all over the US, I gotta say the best I’ve had is at Rudy’s. I love the sauce too!!

You should buy a small smoker and give it a try. Practice makes perfect, and the key is in the rub, and low, long heat. Here’s Rudy’s rub recipe.
    1 pound salt
    4 ounces chili powder
3 ounces black pepper, coarsely ground
3 ounces black pepper, finely ground
    2 ounces hot paprika
    2 ounces garlic powder

Mix all ingredients together and place in an airtight container. Rub on beef, pork, chicken, lamb (anything) generously and marinate 1 to 5 days, refrigerated, before cooking.

I use to be stationed in San Antonio, and use to go to Austin to visit friends, and every time I made it a habit to go to Rudy’s. To bad most people here in CA confuse grilling with BBQ . . . and they are some of the best ‘Q’ in Texas. I miss it. But if you live here there is a good Q place on Clairemont Mesa called Abbey’s Real Texas BBQ. Forget Phil’s . . . that’s just grillin’

I ate many times at what I believe is the origninal Rudys, just outside of Camp Bullis army training center, west of San Antonio (not far from the USAA headquarters). UNBELIEVABLE. I live in New Jersey, and every piece of smoked and grilled meat has pailed in comparison ever since.

NOTHING is as good as the three original locations in/around San Antonio!!!! I can tell by their uniforms they are franchise workers. Our locations/merchandise says ‘original’ by the logo.
