    i think what he was attempting to make was an “elote loco”. literally means crazy corn. this dish is a little different. you have to cover the corn in mayo then roll the corn on the cob with parmesan cheese. then you can add melted butter, lemon, or chile as you please.

    Soaking it in water is a REALLY good idea! We’ve roasted corn on the grill all of my life. It’s the best form of corn, but it’s slightly gummy because the grill dries it out a bit. Never thought of getting it wet first.

    we ate that kind of “elote” since forever, but lately, young ppl adopted a new age kind of elote and it is called elote desgranado, like you mentioned,. But that is the original way to eat elotes… some men went for the street with a old car pulled for horses, with a big bowl with hot water on and the elotes in there, ready to get mixed with limon and chile… both ways desgranados or not are delicious, hugs and excuse my very obviously bad english lol
