i buy a dry rub for ribs then rub them well
bake low in oven 220 degrees for 3 hours
then smother in bbq sauce and grill
or return to oven and broil until crispy
Let the meat come to room temperature and don some disposable rubber gloves. Sprinkle the meat with your favorite rub mixture and massage it in thoroughly. Spray a shallow pan with release spray, (Pam) put the ribs in and cover with foil. Bake low and slow at 250F for 2 hours. Remove foil and bake longer until juices evaporate – slather with your favorite barbecue sauce and bake until the sauce firms up. (I don’t cook ribs on the grill because the heat is too high and makes the meat tough)
Here’s the rub I use and it makes enough for a few meals-
1/4 cup cumin
1/4 cup brown sugar
1/2 cup paprika
1/4 cup chili powder
1 tbsp red pepper
1/4 cup salt
1/4 cup black pepper
1 tsp onion powder
1 tsp garlic
Here is a GREAT recipe –
1/2 cup ginger ale
1 cup golden raisins
1 cup ketchup
1/2 cup light molasses
1 teaspoon Dijon-style mustard
2 tablespoons firmly packed light brown sugar
2 pounds boneless pork country-style ribs, in serving size pieces
1/2 cup Canola Oil
1.HEAT oven to 375ºF.
2.COMBINE ginger ale and raisins in large measuring cup or medium bowl. Let stand 10 to 15 minutes. Add ketchup, molasses, mustard and brown sugar. Blend well.
3.PLACE ribs in large skillet. Brown on all sides over moderate heat; about 5 to 6 minutes. Transfer ribs to 13 x 9-inch or larger baking dish. Pour sauce on top.
4.BAKE 45 to 50 minutes.
