Recipes for Hypothyroidism

Hypothyroidism is the disease in which, the thyroid gland is less active and so produces less hormone called thyroxin. Thyroxin hormone is an important factor for body’s anabolism and catabolism combine known as metabolism. Metabolism regulates the body’s entire system and controls the repair, growth and protection of the body tissues/cells.

There are lot many reasons for developing hypothyroidism and once it attacks a person, it is then quite difficult to manage it fully unless you take regular pills. Patients with hypothyroidism often get confuse what to eat and what not to as they are given the list of ‘contraindicated’ foods in their diet by their dieticians and doctors.

It is not that a person with hypothyroidism will not have any recipes. Here are some of the recipes those are mouthwatering and still good for the diseased condition.

The Magic Pasta

Those who are pasta lovers, they can enjoy this dish with great pleasure. All you need is to follow the below method,

Ingredients

3 cloves of smashed and minced garlic 3 large ripe tomatoes Anchovy paste ¼ extra virgin olive oil Salt and pepper (as per your requirement) Whole-wheat pasta Fresh chopped holy basil Little pecorino cheese Chili flakes

Method:

Make thick slice of tomatoes and put a small dab of anchovy paste on each slice. Top it up with a bit of garlic and pinch of salt and pepper. Now place in glass oven dish. Pour olive oil over the top and bake in 350-degree oven for about ½ hour. Cook pasta until al dente and drain it. Take off the tomato stuff and empty into the empty pot. Put pasta in and toss to coat and the dish is finished when you top the entire material with basil and little fresh pecorino cheese. For spice lovers, put a pinch of chili flakes for seasoning.

Scrumptious salad

Ingredients

1 tsp grated orange peel 2 oranges, peeled and well sliced (seedless) 20 oz unsweetened pineapple chunks ½ cup of sour cream (strictly fat-free) 1 tbsp brown sugar 1 grapefruit (peeled and sliced finely) ¼ tsp grated ginger 1/8 tsp ground nutmeg ¼ cup chopped and toasted pecans 6 cups of torn leaf lettuce Grilled chicken breast (chopped and optional) 2 tbsp milk (strictly fat free) 1 avocado (peeled and sliced)

Method

Combine the oranges, pineapple, and grapefruit into a large bowl. Cover them all and place it into the refrigerator. In another bowl, take sour cream, milk, brown sugar, orange peel. Add ginger and nutmeg. Cover the entire mixture and place this too into the refrigerator.

Let them be in the condition for about one hour.

Divide lettuce and avocado that they can serve in six salads plates. Decorate fruit over the lettuce. Drizzle salad with dressings. You can simply sprinkle with nuts or for non-vegetarians add chicken to it.

These recipes are good to have, as they are rich in Vitamins and minerals that rejuvenate the body. However, it is always advisable for the patient with hypothyroidism to consult dietician before they jump into any newer dish.

4 cups (1 L) cherry tomatoes, halved 

12 cloves garlic, halved 

1/4 cup (50 ML) extra-virgin olive oil 

1 tsp (5 ML) dried basil 

1/2 tsp (2 ML) salt 

1/4 tsp (1 ML) each hot pepper flakes and pepper 

1 lb (500 g) bucatini 

1/4 cup (50 ML) chopped fresh parsley 

1/2 cup (125 ML) shaved Parmesan cheese

In 13- x 9-inch (3.5 L) metal cake pan, toss together tomatoes, garlic, oil, basil, salt, hot pepper flakes and pepper; roast in 400°F (200°C) oven until tomatoes are shrivelled and garlic is tender, about 30 minutes.

Meanwhile, in large pot of boiling salted water, cook pasta until tender but firm, 8 to 10 minutes. Drain and return to pot. Add tomato mixture and parsley, tossing to coat. Serve sprinkled with Parmesan.

CITRUSY CHICKEN BITES

1 tsp (5 ML) grated lime rind 

2 tbsp (25 ML) grated orange rind 

1 tbsp (15 ML) orange juice 

2 tsp (10 ML) packed brown sugar 

1 tsp (5 ML) each paprika and chilli powder 

Pinch salt 

1 lb (500 g) boneless skinless chicken breasts

In bowl, whisk together lime rind and juice, orange rind and juice, sugar, paprika, chilli powder and salt.

Cut chicken into 1-inch (2.5 cm) cubes; add to bowl and toss to coat. Place on foil-lined baking sheet. Broil for about 5 minutes or until no longer pink inside.

Preparation time: 30-35 minutes, cooking time 5 minutes

STRAUBERRY, RASPBERRY, SMOOTHIE

1 cup (250 ML) raspberries 

1/2 cup (125 ML) cranberries 

1/2 cup (125 ML) strawberries 

1 cup (250 ML) orange juice 

1 cup (250 ML) yogurt 

1 tsp (5 ML) honey 

ice cubes

Wash the fruit. Place all the ingredients in a blender. Mix well for a runny puree. Serve chilled in a tall glass.

SQUASH APPLE CASSEROLE

This dish is high in vitamin A, a good source of vitamin C, cholesterol free, and almost sodium-free.

2 1/2 cups fresh winter squash, cut into 1/2 inch slices

1 1/2 cups cooking apples, pared and cut into 1/2 inch slices

2 tea spoons cinnamon

1 teaspoon nutmeg

Alternate layers of squash and apples in an 8″x 8″ pan, ending with apples on top layer. Sprinkle spices over top layer. Cover pan with aluminum foil and bake in 350 degree F oven for approximately 45-60 minutes until squash is tender. Remove foil and bake another 10-15 minutes to remove any excess liquid that might have accumulated. Cool slightly before serving.

Serves 4.

Vegetable Fried Rice

1/2 cup celery, sliced

1/4 cup onion, chopped

1/4 cup peas

1/4 cup carrots, chopped

1/4 cup corn, broccoli, peppers or mushrooms, chopped (optional)

2 cups boiled rice

1 tablespoon Worcestershire or soy sauce

1/4 teaspoon garlic powder, or 1 clove fresh garlic, minced

2 teaspoons vegetable oil

Dash of pepper

Heat oil. Add celery, onion, and garlic. Stir-fry for 2 minutes. Add peas and carrots, and any optional ingredients. Stir-fry again, turning pieces all the time until they are tender, about 4 minutes. Add rice, Worcestershire or soy sauce and pepper. Stir-fry about 2 minutes.

Fiesta Burgers


1 ½ pounds ground beef

¼ cup onion, chopped

2 tablespoons red bell pepper, finely chopped

3 tablespoons salsa

2 teaspoons prepared Dijon-style mustard

1 tablespoon prepared horseradish (optional)

salt and pepper to taste

4 sesame seed hamburger buns

leaf lettuce and sliced tomatoes

Preparation Directions

Wash hands with soap and warm water for 20 seconds before handling the meat.

In a bowl, mix ground beef with onion, red pepper, picante sauce or salsa, mustard, horseradish (if desired), salt and pepper.

Form into four burgers, about ¾ inch thick.

Wash hands with soap and warm water for 20 seconds after handling the meat.

Using utensils, place burgers on grill that has reached medium-high heat.

Check each burger with a food thermometer after approximately 10-15 minutes. Turn burgers as needed. A hamburger is done when it reaches 160 °F.

Clean the thermometer between uses with hot, soapy water.

Place burgers on buns and top with condiments and garnishes of choice.

After checking the final temperature, remember to clean the food thermometer with hot, soapy water.

SERVES 4

VEGAN MIXED BERRY MUFFINS

Flour, white, 1.75 cup

Raw sugar, 4 tsp

Baking Powder, 2 tsp

So Good ‘Trim’ Soymilk, 1.25 cup

Egg Replacer, 1 serving

Applesauce, unsweetened, 25 grams

Strawberries, frozen, unsweetened, 0.125 cup,

Blueberries, frozen (unsweetened), 0.125 cup,

Blackberries, frozen (unsweetened), 0.125 cup,

Raspberries, 0.125 cup

Preheat oven to 400 degrees. Spray a 12-cup muffin tin with non-fat cooking spray. In a large bowl, combine all dry ingredients.

In a smaller bowl- combine applesauce and soymilk.

Chop the frozen berries into a manageable size.  Add wet ingredients to the dry, and stir to combine, adding berries as you mix. Using a 1/4 cup measure, scoop into prepared muffin tin (they should be about 2/3 full), bake for 20-25 minutes (when a toothpick inserted comes out clean). Cool in tin for 5 minutes, then turn out to cooling rack.

serve warm.

Chinese milk producers added the industrial chemical melamine in their products to make them appear richer in protein. Melamine can cause kidney stones, and even life-threatening kidney failure in some cases.

On October 20, 2008, Confirmed cases of E.coli were linked to a Harvey’s Restaurant in North Bay Ontario. 

More confirmed cases rose to 35-health officials claim. Health officials also said they know of a total of confirmed case of E coli 0157:H7 in the outbreak, involving eight health units in Ontario.

The out break was likely caused by human error rather then undercooked hamburger meat, a professor of food sciences, University of Manitoba, who has worked for Agriculture Canada.

Lasagna Recipes

The main lasagna recipes are those with tomato and besciamella sauce. Lasagna is only another shape of pasta and so, it also matches with an infinity of seasonings.

Among all lasagne recipes, the number one should be the most traditional one. Before preparing it, it’s necessary to have already a tomato meat sauce and a besciamella ready to use.

A good tomato meat sauce needs good ingredients, as they contribute strongly for the best final result.

You’ll need (4 people):

• 4 spoons of extra virgin olive oil

• 200 gr of ground veal meat (instead of ground, it can be minced too)

• 2 cans of peeled tomatoes

• ½ minced onion

• 2 pieces of minced garlic

• minced parsley

• some basil leaves (if you don’t have them, don’t worry)

• salt

How to do it:

Put the oil inside a pan (it’s better to use a “high” pan, to avoid squirts), turn on the gas and add the minced onion. Leave it for a while, mixing it to avoid overcooking, and then add the minced garlic and the minced meat.

After colouring it for a while, add the peeled tomatoes cut in medium pieces. Mix it all and leave it on high gas for a while. As it begins to boil, regulate the gas to avoid overcooking it, but leave it a little bit high. Otherwise you’ll get a “too liquid” sauce, and a good one should be dense. Mix it every now and then.

When your Italian tomato sauce is ready? When the oil is separated from the tomatoes. It’ll take about half an hour for this quantity, but pay attention when you mix it that you’ll notice that you can see the oil apart from the tomato cream.

The besciamella:

It’s much simplex than the name suggests. Just take ½ liter of milk, add 3 spoons of wheat flour and half spoon of butter. Mix it while on the low gas until it’ gets creamy. Add then salt and nutmeg.

Other than the tomato sauce and the besciamella, you’ll need Italian mozzarella and grated Grana Padano or Parmigiano Reggiano. Don’t use any cheese, as a good cheese really makes the difference.

The lasagna packages say that it doesn’t need to boil before going to the oven. But the old Italian women are distrustful and prefer to do it their way. What do they do? They put the lasagna sheets for about a minute into the boiling salted water and then put them on a dishtowel, without laying one upon another.

(If you choose not to boil them, they will come less softy and the sauce will not mix so much.)

Take an oven pan and begin with a layer of tomato sauce, then lasagna sheets (not overlapping them), besciamella, tomato sauce again, pieces of mozzarella and grated Grana Padano.

Go ahead until the ingredients finish, taking care of finishing with the tomato sauce with cheese.

Put it into the pre-heated oven (about 180°C) for about 30/40 minutes, when it began to get crispy on the boards.

Tip: After taking it out of the oven, wait for about 20 minutes before serving. It will allow the pasta to absorb the sauces and will be easier to cut and the taste will gain.

Other lasagna recipes:

An easy and original idea is to use pesto between lasagna sheets, adding grated Parmigiano Reggiano and less besciamella.

Another vegetarian recipe is using tomato sauce without meat. Do the sauce in the same way without adding meat and proceed for the lasagna the same exact way.

An original veggie recipe is using grilled eggplant between tomato sauce and besciamella.

• 1 (1 1/4 ounce) package taco seasoning
• 1 lb ground beef or ground turkey
• 6 large flour tortillas
• 2-3 cups shredded taco cheese or cheddar cheese
• 1/2 medium yellow onion, chopped
• jarred hot sauce, if desired to spice it up
• 4 ounces sour cream
o Sauté ground meat and onions then drain it.
o Stir in re-fried beans and taco seasoning.
o Mix the sour cream and soup in a bowl.
o In a casserole dish, spread ½ sour cream mixture by the bottom portion.
o Spread the tear tortillas and add a layer of cheese.
o Put hot sauce on top and repeat the steps so as to form layers.
o Sprinkle cheese over and bake at 350 Fahrenheit for about 20 to 30 minutes.

Taco Bell Quesadillas
Ingredients
For the Sauce:
• 2 teaspoons minced jalapenos, slices
• 1/4 cup mayonnaise
• 3/4 teaspoon sugar
• 2 teaspoons jalapeno juice, from minced jalapeños
• 1/2 teaspoon cumin
• 1/8 teaspoon cayenne pepper
• 1/2 teaspoon paprika
• 1 dash salt
• 1/8 teaspoon garlic powder
For Quesadillas
• 4 chicken tenderloins
• 4 flour tortillas
• 1 cup shredded cheddar cheese
• 2 slices process American cheese
• 1 cup shredded Monterey jack cheese
o Combine all the sauce ingredients and stir.
o In vegetable oil, grill the chicken into thin slices.
o Pre-heat skillet in medium heat.
o Place the tortillas while sprinkling ¼ cup shredded cheese. Put ½ cheese slices on the side of the tortilla.
o Arrange chicken slice (¼ cup) on the tortilla and cover it with cheese in halves.
o Spread about one tbsp. sauce on the other side.
o Fold and press it using a spatula.
o Cook until the cheese melts.
o Slice this into 4 pieces.

Wholly Guacamole
Ingredients:
• 6 avocados (soft, but not mushy)
• 1 medium tomato, diced
• 2-4 minced garlic cloves
• 1 lime, cut in half
• 1/2 medium onion, diced
• salt
• 1 diced jalapeno pepper (optional) or diced Serrano pepper (optional)
• chopped cilantro (optional)
o Cut the avocados and spoon it into a mixing bowl.
o Squeeze the juice and add minced garlic one half at a time.
o Mash all the ingredients of the desired consistency.
o Fold in onions, tomatoes, salt, lime juice, cilantro or peppers.
o Cover and refrigerate it for 30 to 45 minutes.

Or as said above, they also may ask you to refine your search results, which is nice because then you can say okay I want a restaurant located in Naples Florida, but I want it to be on Sea Gate Drive because I’m going to be in the vicinity and will want to grab lunch. So just enter in that easy info and voila, results! If you are really lucky you may just go to an engine and they asked for the type of restaurant you want such as eat in, dine out, delivery, etc.
